More Japanese Cooking Classes in Central London

 Hiromi Stone is a Japanese client of mine. She is married to an
American and is living in London.
She grew up in both, Japan and the US, and brings a unique view that is
shaped by being bilingual and bi cultural. Her blog is her foray into connecting
with the world through observations on Japanese cooking, her charity work for
Dress for Success and cross cultural perspective.
She will starting Japanese cooking classes this month, form her home in
Central London; which I whole heartedly support and encourage you to
attend.
Hiromi's philosophy
Hiromi says that: "Japanese cooking to me is all about
the use of seasonal fresh ingredients. I use organic where possible and try and
stay away from chemical additives.
I was taught to cook by my mother so this class focuses on home cooking.
Japanese food uses relatively little oil, is dairy free and as long as you watch
the salt and sugar, it can be a healthy way to eat. Above all for me, it is
comfort food. I hope you will feel the same way after taking my classes."
The Classes
Classes will be held in my loft in central London. Recipes will be provided
so you can take notes while you watch. Afterwards we can all sit down together
and enjoy the dishes prepared that evening.
The classes are organised in blocks of 5. The first class is an
introductory one and the other 4 build on skills learned in the first one.
The maximum I can take in any one class is 6 people.
I
am repeating the basic course again on 5 Wednesdays beginning 16 June. In
addition, I have one off classes during the same time period so please scroll
down to see the listings.
All classes are
from 6:30-9:30 and include dinner.

Class 1 Dashi and Rice - the Soul of Japanese
Cooking
16 June (Wed)
Dashi (stock) and rice are at
the heart of Japanese cooking. Get these two things right and you are well on
your way to producing a delicious meal. The class will cover the different ways
to make dashi and ways to produce that perfect pot of rice. Miso soup and
teriyaki salmon are also on the menu and you will have a chance to make your own
onigiri (rice balls)
Class 2 Vegetables

Fresh seasonal vegetables are
an important feature of Japanese cooking. Dishes on the menu include string
beans with sesame sauce, grilled asparagus, fried tofu balls and of course rice
and miso soup.
Class 3
Fish
30 June
(Wed)
Here's a challenge, make tasty
Japanese fish dishes with fish from the supermarket, not a speciality
fishmonger. Using what's freshest from the market, grilled, stewed and fried
options will be shown.
Class 4 Meat Japanese
style
7 July
(Wed)
Eating meat is a relatively
recent thing in
Japan
, perhaps in the last 100
years or so. Pork with ginger sauce, a light chicken salad and easy beef soup
are on the menu.
Class 5 Home
Sushi
14 July
(Wed)
Sushi refers to the vinegared
rice which forms the base. Nigiri sushi, which most people think of when they
think sushi is actually not prepared at home. Maki sushi (rolls), gomoku sushi
(mostly veg) and inari sushi (deep fried tofu) are more typical of what is
served at home. You will have the opportunity to roll your own, make your
unique creation.
Additional Classes
These
classes can be taken on their own. However, I would recommend having taken the
Dashi class before the dinner party class. Same format, 6:30 start, ending with
dinner. £40/class.
Dinner Party Menu
24 June (Thurs)
A simple
dinner party menu to impress your friends. It will include a timing sheet so
you can plan your time and be able to enjoy your guests.
Take a Pot of Rice
1 July (Thurs)
Rice is
the staple of the Japanese diet and so very versatile. You can put things in
it, on it, the sky's the limit. Some dishes require a fresh pot of rice while
others are better when the rice has gone cold.
Vegetarian
8 July (Thurs)
It's hard
finding Japanese food that doesn't have some form of fish in it. So why not
make your own? We begin with a veggie dashi (stock) and explore dishes that are
satisfying without the use of fish or meat.

is one of the many places in
the
Piccadilly Circus
area that carries Japanese
groceries. We will go around the aisles and I can point out the items that have
been introduced in class. Once you have an idea of what the items are, you can
order non perishables from their website and have it
delivered.
How to Join
Cost is £40/class. If you sign up for 3 or more classes, the trip to Japan
Centre is included.
